Cooking with Claud: Shrimp Scampi

INGREDIENTS:
– 2 tablespoons olive oil
– 1/2 lb of raw shrimp
– 2 leeks, white & light green parts
– 1/2 cup low-sodium chicken stock
– 1/4 cup nonfat Greek yogurt
– 1 1/2 teaspoon lemon zest
– 1/4 teaspoon salt
– 1/4 teaspoon pepper
– 3/4 lb pasta

RECIPE:
1. Cook shrimp then set aside to cool
2. In separate pan, cook oil
3. Cut leeks down the middle and make 1/4 inch strips then add to oil
4. Add chicken broth, greek yogurt and lemon zest
5. Cook together than add cooked shrimp
6. Cook pasta and add everything together!
